Executive Chef Pandee Pearson’s reputation precedes her. Her notoriety began at the lovely Windows on the Water where her weekly pilgrimages to the Morro Bay Farmer’s Market inspired her nightly creations. Instead of looking for ingredients to complete her signature dishes, she first becomes inspired by walking through the market searching for color and uniqueness. Back in her kitchen the dishes take shape. On Saturday, March 1st, Trilogy Central Coast will proudly unveil its community centerpiece, the Monarch Club. Destined to exceed even the highest expectations, this 31,000+ square foot Resort Club will feature all the latest in fitness, relaxation, and more. Among other things, the Monarch Club will include a full-service restaurant and market - Adelina's Bistro. In addition to the delicious Bistro, Adelina's also is home to The Market Place, a complete specialty grocery store. Pandee intends to fill the store with local ingredients. From a vast selection of breads and cheeses to an exemplary local wine collection to olive oil from all over the world, The Market Place at Adelina's is one part farmer's market, one part old-time country store.

Christi Rivera and Tara Jones recently purchased the Honeymoon Café in Pismo Beach filling a long time dream for both women to own a business. They have a shared passion for using local, organic ingredients and reducing waste. Rivera and Jones have filled their menu with cooked foods like soup, burgers, quiches and other entrées. They found local providers such as Hearst Ranch for grass-fed beef, Los Osos Ranch cage-free eggs, Secret Garden for herbs and fair-trade teas. Their produce comes from local farms, coffee from Coastal Peaks Roasters, and chocolate from Sweet Earth organic. What else they can’t get locally, like dairy and soy products, they buy organic.
