Zesty Carrots
Ingredients:
- 6-8 medium carrots
- 2 tbsp grated or finely chopped onion
- ¼-½ tsp salt
- ¼ pepper
- ½ cup mayonnaise
- ¼ crumbs from bread or croissant
- Some amount of butter
- Optional: paprika, ginger
Cut carrots lengthwise and in half (or just use baby carrots!). Boil until mostly done. Put carrots in a glass pan for baking. Save ¼ of broth. Pound or roll crumbs, melt butter and stir together in a bowl. Blend mayo, salt, pepper, spice, and broth. Pour over carrots. Sprinkle crumbs on top. Bake at 375° for 15 to 20 minutes.
