Yellow Tomato Gazpacho
Ingredients:
- 6 Yellow Heirloom Tomatoes, ripe
- 2 cloves garlic, peeled
- 1 Cucumber, cut into large pieces Depending on your palate, you might want to
- take the seeds out
- 1 yellow pepper, seeded and cut into large pieces
- 1 red onion, cut into large pieces
- ½ small hot red chili, seeded, cut into large pieces or to taste
- ¼ cup red wine vinegar
- 3 ounces extra virgin olive oil
- Sea salt and white pepper, to taste
- 4 each – orange and yellow cherry tomatoes, cut in half, for garnish
